Your problem is simply tapping Luma/Y and amplifying it correctly. You should simply get a perfect black'n'white picture after wiring up just that and amplification. So yeah, the trick on getting a perfect Chroma has nothing to do with this.
Alright, so recheck the following:
1) Make sure the +5V power line is connected to the correct lead ('Collector') which is the right side when facing the front of a NPN transistor.
2) The signal input goes to the middle lead ('Base').
3) The amplified output comes out of the left side ('Emitter').
If you did all that correctly, and Luma/Y is tapped correctly from the video chip, then that simply leaves the issue being the transistors that you bought.
