How do you remove the shielding from a SUPER CD-ROM?

I'm trying to get at the component board installed in my SCD, so I can try adjusting the pots. I've located the board on the underside, behind the bottom shielding plate. Where the shielding hooks into the pcb, it looks like it's soldered in place. Is this normal and would I have to desolder and then resolder it in place in order to adjust the component board?

You would have to desolder.  It is normally soldered in.  Sorry for putting it in such a difficult location.  It was one of my first component mods and I got a little too cute with the install location.  Thought I was being slick.  If I had to do it all over again I would put it somewhere outside the rf shielding

Well, I may not have soldering skills, but I think that this is the kind of thing I can pull off. :)

Any particular kind of solder wire I should or shouldn't use?

You might not need any to just remove and reinstall the shield. You can probably just use whats on there to reattach it when you are done.  But if you want to get some, get some 60/40 or 63/37 solder. I use multicore brand like this one:

Also get some de soldering wick/braid to remove the solder from the slots the screen is soldered to.
It will make it a lot easier to put back.
